Hello 

Can you please tell me what precaution do we need to take to ensure all our functionalities are working and no issues are interrupting our service? 
Can you please tell me what are the areas we need to check while Site switching is happening? What areas generally get affected?

you should treat this as a project, you will need to evaluate all interfaces, standard and custom , to have a proper answer.
Most Salesforce standard interfaces have queuing cabaility that will hold on to trasnacitons submitted and will resubmit them ,but you still need to check.

There is no article/document that will be aware of your org's fucntoinlity, only you can evaluate your org and answer whihc crticial business features would be affected
