Does Einstein Activity Capture save emails after the email account is disconnected from Salesforce?

Hello!
We have an employee that is no longer with us. This is the first employee to exit the organization since our Einstein Activity Capture launch.  Our IT team will delete the user's Microsoft account (i.e. Outlook) that is connected to Salesforce through Einstein Activity Capture. Will this action break the sync and the user's emails will be deleted? Or will Salesforce retain the user's emails even though their Outlook account is disconnected from Salesforce?

If you make the User Inactive in Salesforce this will stop the sync and so if you then change something on the Outlook side it should have no impact.
