Salesforce Trailhead has beginner modules for Business Users (non-Admins) that may give you some good ideas:

Salesforce1 Basics for Users - https://trailhead.salesforce.com/modules/lex_salesforce1_basics

But it's always better to create documentation geared toward the specific business flow that your usiers will experience when they login to Salesforce.

Another good idea is to record trainings when you conduct them using a screencast tool like SpinWeb (https://blog.spinweb.net/using-screencasts-for-training) or session recordings in GoToMeeting (http://support.citrixonline.com/en_US/meeting/all_files/G2M040008). That way you can have your new hires watch the training videos before they start using Salesforce.

Hi. I'm a special kind of user, the executive director of a small nonprofit considering using Salesforce. I need documentation that will help me decide whether Salesforce is the right platform for us. We're small and growing. We don't have many established business practices yet. I have no idea how to communicate my requirements to a consultant. I don't understand Agile or SCRUM or most of the newer development vocabulary. I know about tables, records and fields. I'm pretty good with a spreadsheet. Salesforce is expensive to implement. Can you help me start at the very beginning - a very good place to start?
