We have set up a separate Profile for the Team members and granted only Read access to Accounts and Opportunities, as we do not want Team members to edit any other opportunities that they are not assigned to. Then on the Opportunity Team level, we have granted them Read/write access to assigned opportunities. But, unfortunately they are not able to edit the records! What would be the reason, and if I did something wrong what is the correct set up to grant team members edit access to only the records they are assigned to.

The Profile sets Object permissions, while Opportunity Teams set record access. If you do not have the EDIT object permission, you will never, under any circumstances, be able to edit ANY record of that object. You MUST give users Read AND Edit object permissions in the Profile, set the Org-Wide Default for the object to Public Read Only, and use Opportunity Teams to grant Read/Write access. There is no other way.
