Email to BCC isn't triggering process builder

I'm trying to update a field when a new task is created in activity history via the Email BCC to Salesforce function.  I've built the process and activated...but it doesn't seem to be getting triggered by these emails.

Jordan, I ran into a similar problem a while ago and unfortunately, the only workaround was to use an Apex trigger. I have explained it in detail in my blog post below. Hope it helps:
