I have an scenario where an Company Account has several contacts. We create several Service Cases for the account.
We have this example:
One owner has sold the business, the new owner would like to remove him/her, although there are advice cases with the old owener on the account.
What should we do in this type of scenarios to remove contacts attached to Accounts without deleteing any cases related to it?

You can Just empty out the contact field from the case and keep the Account field filed.
This will help you to get the count of case for a account and you can delete the contact thereafter
