I noticed a dashboard for all opportunities broken out by sales persons names but it stops at the letter N and there is no way to page down further.

A dashboard is not designed to be a list. That is what Views are for. If you have a Visualforce developer handy, they could create a VF page as a component on the Home tab to pull in an Opportunities view for you. This would be a list of Opportunities filtered by whatever you wish, where you could click each one to open it, and add attachments to.
Otherwise, you can create the Opportunity View and access it from the Opportunity tab and no development is required.
Or you could create a report of the Opportunities and then have a custom link on the Home tab that when clicked, it runs the report and you can work from it.
