I created default Account teams in SFDC, but is it possible to create different account teams.
Eg. A team of 3 people assigned to an account, and another team of 4 people assigned for another account.?

Account teams are typically tied to the account owner. So if Brad owns account X then Bill, Jane, and Jill are included as well. So if a particular user account needs more then 3 people assigned it shouldn't be a big deal.
Its been some time since I played with Account teams but I believe that is the functionality.
