Hello Kathy, I guess it depends if you want to just stop the sync for one person, stop the sync for everyone or uninstall the connector just for one user.

I guess it depends if you want to just stop the sync for one person, stop the sync for everyone or uninstall the connector just for one user.
If you want to stop the sync for one user but keep the connector installed you could change the password that Outlook is using to log into Salesforce in the background. I believe in Outlook it's under Tools > Salesforce Options
or
uninstall the connector completely:

or
change the what globally syncs for your organization in (for example if you want to globally stop syncing tasks and calendar events):
Setup > Administration Setup > Desktop Administration > Outlook Configurations
One other variable - it depends on which VERSION of the outlook connector you are using: "Salesforce for Outlook" or the older "Connect for Microsoft Outlook"
Because there are two flavors - leverage help as needed...
