Why do my workflow emails show in both the Activity Log & the HTML Email Status?

Is it simply because these two related lists are performing two separate functions- one records all past activity and the other allows you to see when an email was opened?

Thanks for attaching the screenshot. Its just the email task/activity which is created from your workflow email. The reason why it is showing in HTML Email Status related list too is you are using a HTML template on your workflow email. Whenever you will select a html template it will create a record in HTML Email related list. If you will choose a plain text email template it will not create any record in HTML Email status related list.

Hi Kirsty,

HTML Email Status is additional feature when you use HTML email templated and enabled it.

Setup | App Setup | Customize | Activities | Activity Settings | Email Tracking (checkbox)
and add the HTML Status related list

If you ever don't needed this, you can turn this off by removing from your list views or un-checking as mentioned above.
