Create a workflow to update task subtype

I am trying to create a workflow rule and action to update the Task Subtype field based on the subject of the task.  I can create the rule just fine, but when I go to add the Field Update Workflow Action, the Task Subtype field isn't an option in the list of Standard or Custom Fields.  Am I missing something?

I have confirmed this behavior in my org (it's a standard picklist field by the way). This looks like one of those weird standard Salesforce fields that you don't get full access to use. See:

The second link, under Task Subtype, says "This field isn’t updateable."

OK, I think you're right Nathan.  I had been assuming "not updateable" meant from an end user standpoint.  I guess it refers to workflow updates as well.

Does anyone know what updates the subtype? I see they have values of call and email for example, so how are those updated? Is it only updated when you manually log a call or send an email from salesforce? It doesn't seem to trigger of of the standard "Type" field.

Does anyone know the answer to Jadden's question? I am trying to dig into this with the switch to Lightning. Having only one green task icon is not helpful and I am trying to figure out how everything is linked to customize it.

I found that the Task Subtype field populates "Email" when an email is logged by Outlook Integration, whereas if I create a Task using the same record type through the UI, the Task Subtask field defaults to "Task". In both tests, the Type field is Email.

This makes sense but is there any documentation on what is expected?

You can set this field when the Task is created via a Quick Action.
I'm assuming that you can't UPDATE the field once the task is created.
